Turkey Pinwheels



I wanted to whip something up that would be fun and tasty for lunch - and have not had the chance to play around in the kitchen much since our little one arrived! I decided pinwheels would be quick, easy, and tasty and came up with the recipe below. As with most sandwich type recipes, this is very easily adjusted to your personal preferences. Use mayo or ranch dressing in place of cream cheese, change up the flavor of cheese, add additional veggies (tomato and cucumber would be great!) Make it your own, and enjoy this as a light and refreshing lunch, or as appetizers.

Turkey Pinwheels

Ingredients
1 8-inch tortilla
1 TBS cream cheese
1 TBS shredded cheddar cheese
5 thin slices turkey lunch meat
1 slice bacon, cooked crispy and crumbled
1 - 2 slices romaine lettuce, in large pieces

Directions

  1. Lay tortilla out on a cutting board and smear cream cheese evenly over it. Layer on the lunch meat, sprinkle with bacon and cheese, and add the romaine lettuce over the top.
  2. Roll tightly, and then slice into about 6-7 rolls (depending on desired thickness).
  3. Serve and enjoy!
