RECIPE: J.P.'s Big Daddy Biscuits

I think I'm on a new recipe making quest! I am having a great time trying lots of new stuff out, and Kent is enjoying it too! :D

We made these ones tonight.

J.P.'s Big Daddy Biscuits

INGREDIENTS
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 tablespoon white sugar
1/3 cup shortening
1 cup milk

DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C).
In a large bowl, whisk together the flour, baking powder, salt, and sugar. Cut in the shortening until the mixture resembles coarse meal. Gradually stir in milk until dough pulls away from the side of the bowl.
Turn out onto a floured surface, and knead 15 to 20 times. Pat or roll dough out to 1 inch thick. Cut biscuits with a large cutter or juice glass dipped in flour. Repeat until all dough is used. Brush off the excess flour, and place biscuits onto an ungreased baking sheet.
Bake for 13 to 15 minutes in the preheated oven, or until edges begin to brown.

For me it made 7 big biscuits and I followed the recipe precisely. I will make a couple changes next time, I will brush the tops with melted butter and try the butter flavored shortening (though I thought the taste of these was great as is, but it was one of the suggestions I read that I want to try). These came out beautifully golden brown with layers of soft fluffy biscuit in the middle. I think I did overwork the dough a little, they were a little firm, but still very soft in the middle. Next time I won't knead as much as it says to, maybe just a few times to pull the dough together.

Kent really liked them too and said they get "5 stars". :) These will be GREAT for biscuits and gravy, nice and hearty and will hold up to the gravy. I know Kenneth will enjoy this recipe when he gets to taste it when he's home next! :)
